How to Make Tongseng Chicken

According to what I read in articles about food history, tongseng is a type of sugar with a sharper seasoning. Tongseng comes from the archipelago, precisely in Central Java. Well, the ingredients you have to buy and prepare to make chicken tongseng are 500 grams of chicken meat that has been cleaned and cut into small pieces, don't forget to add lime so it doesn't smell fishy, then prepare cabbage, red onions, and onions. white, pepper, salt, sugar, red chili, cayenne pepper, coriander powder, flavoring, coconut milk, sweet soy sauce, bay leaves, candlenut, tomatoes, lime leaves, lemongrass stalks, ginger and the last one is galangal. After you have prepared all the ingredients and spices, now let's start the first stage.

The first stage, now cut into small pieces the cabbage, tomatoes, scallions, onions and red chilies. Prepare ginger and galangal 1 finger segment, peel the onion and garlic.

The second stage, after you have prepared the ingredients as in the first stage, now prepare a blender and put 4 onions, 5 garlic, 3 candlenuts and 1 turmeric finger. After that, pour a little water into the blender, pepper and coriander powder to taste. Then blend all the spices until smooth and well blended.

The third stage, after you have blended all the spices until completely smooth, now prepare a frying pan and pour a little cooking oil, then heat it first using low heat.

The fourth stage, after the cooking oil has been heated for a few minutes, now pour all the spices that you have mashed using a blender. Then stir the spices for a few minutes using low heat.

The fifth stage, after the spices have been stirred for a few minutes, now add 2 bay leaves, 2 lemongrass stalks, 2 lime leaves that have been squeezed and galangal that has been crushed. Then stir in the spices until well blended.

The sixth stage, after you have stirred until the spices are well mixed, now pour all the chicken meat that you have cut into small pieces into the pan. Then stir continuously until the chicken meat is evenly mixed with the spices.

The seventh stage, after the chicken has been stirred until well mixed with the spices, now add enough mineral water into the pan. Then stir again until it releases a few bubbles.

The eighth stage, after you have cooked until there are a few bubbles, now add other spices to the pan such as 2 tablespoons of granulated sugar and 1 teaspoon of salt. Stir the tongseng sauce until all the spices are evenly mixed.

The ninth stage, after the spices have been mixed well, to add spicy and delicious, now add the red chili and cayenne pepper that you cut into small pieces before. Then stir again until well blended.

The tenth stage, after all the chilies have been mixed well, now the most important point that must be added is coconut milk, use good quality coconut milk or kanu can also buy instant coconut milk like the one I use, also add chopped tomatoes to make it more delicious in the pan. Then stir continuously until the coconut milk is evenly mixed.

The eleventh stage, after the coconut milk and tomatoes have been mixed well, you can see that the sauce is yellow and white, not much different from curry, it's just that the spices are a little sharper and fragrant. Now add enough sweet soy sauce to your liking. Then stir again until the sweet soy sauce is evenly mixed with the tongseng.

The last stage, after you have put the sweet soy sauce and mixed well, now is the time for you to put the cabbage and green onions, you can put the cabbage according to your wishes. Because the characteristic of this tongseng uses cabbage. Then stir again until the cabbage and green onions are evenly mixed.

And finally, the chicken tongseng is finished and can be enjoyed with your family or friends. Usually this tongseng uses mutton or beef, you can adjust to your wishes. The taste of this tongseng is very delicious when eaten with warm white rice, the chicken meat is very tender and the tongseng sauce is very permeated with the chicken meat. What do you think ?
