Peanut Butter Crunch French Toast

I really like peanut butter.

Really, really, like.

Favorite late night dinner? Toasted peanut butter and jelly bagel.

I decided to take two things out of that equation and create something new. Toast + peanut butter. As in, french toast stuffed with peanut butter. I also threw in some banana slices to stuff it even more. This is the perfect breakfast for those days where you sleep in to a delightfully late hour and can’t decide whether to have breakfast or lunch.

Or perhaps breakfast in bed if you’re one of those lucky people.

Also, let’s talk bread for a second. For french toast, it works the best if your bread is a little dried out so it’s a great way to use up old bread. In this recipe I just used some basic sandwich bread because it’s what I had on hand but I’d really recommend using a “fancier” bread like brioche for the best texture. You want the middle part to be able to really soak up that egg mixture and still be nice and fluffy after you fry it. Stay away from super crusty bread if you can, the crust will be a little difficult to get through after it’s fried.

When dipping the bread, I was a little paranoid about it cooking all the way through so I was careful not to submerge the whole thing into the egg mixture. I dipped it in about halfway through the bread and then flipped it over to do the other side. It’s also important to put peanut butter on both slices of bread so that the banana slices have something to stick to.

It’s also important to have as much peanut butter as possible, in every scenario really. In this case, the peanut butter can be swapped out for almond or sunflower seed butter.

Or Nutella, if you are feeling especially indulgent.

When it comes to the frying, I recommend reducing the pan heat just a smidge so that you can cook it a little longer without it getting burnt. I did this so that I knew the inside peanut butter would become all melted and the outside would be a little more cooked through. If you would rather have a less monstrous breakfast, simply cut a piece of bread in half and prepare it that way.

Either way, yum.

Peanut Butter French Toast Recipe

Ingredients

1 egg
¼ teaspoon cinnamon
½ teaspoon vanilla
2 tablespoons milk
2 slices of bread
2 tablespoons peanut butter
1 small banana
butter, maple syrup (optional)

Instructions

Slice banana, set aside. Preheat a griddle or skillet to medium-low heat.

In a small bowl, whisk together egg, cinnamon, vanilla, and milk.
Spread peanut butter onto each slice of bread and top with half of the banana slices.

Carefully dip “sandwich” into egg mixture and place on greased griddle. Cook until bread is golden, flip and repeat for the other side.

Top with remaining sliced bananas, butter, and maple syrup.
