Hello friends, so earlier this week I assisted my grandmother in Garri making and I'm here to share my experiences with you.
What is Garri?
Garri is a powdery food material flour made from cassava plant.
Here are the following stages in the production of garri :
Harvesting: This is the first stage you take while processing garri. It is done by going to the farm and uprooting the cassava stems to harvest cassava tubers.
Peeling: Is the second step you take while processing garri, it involves using a knife to peel off the brownish outer layer.
Washing: This is the immediate step that proceeds after peeling. This is done by using clean water to wash the the dirt and impurities to ensure that the cassava is clean for the grinding process.
After washing I conveyed the cassava to the grinding mill
Grinding: This process is carried out by simply passing the cassava tubers into a grinding machine in order to be converted into smooth pulp form.
Dewatering/ Drying : This involves applying pressure on the grounded cassava pulp to reduce its moisture content. I left the cassava produce in an enclosed and porous bag at the mill till the next morning in order for it to dry fully.
I went back the next day to get the cassava and I paid about $2 for the whole grinding process.
Seiving : This is done by passing the Cassava Marsh into a wooden basket-like seive to separate the bigger particles from the smaller ones.
Frying : This involves the crucial heating of the garri with a shallow iron pan with firewood connected to it. This is the most stressful stage for me as the smoke really disturbs my sight and constant sitting down for hours to avoid getting it burnt.
Cooling : After frying, the product is very hot and its been allowed to cool at room temperature for some time.
