Espero se encuentren de maravilla y que esta semana puedan lograr todos esos objetivos que se planteen. ♥
Desde hace algún tiempo quería preparar unos cupcakes húmedos de chocolates, pero siempre terminaba con un resultado esponjoso y suave, que aunque no sabían para nada mal, no era lo que yo buscaba.
Hablé con una tía que prepara muy bien los pasteles de chocolate y me aconsejó que sustituyera la mantequilla de mi receta por aceite vegetal, ya que gracias a este pequeño cambio podría obtener la consistencia ideal.
Me aventuré entonces y preparé en compañía de mi hijo estos ricos cupcakes. Quedaron deliciosos, no tan chocolatosos como esperaba por un pequeño percance con el cacao en polvo (me vendieron una mezcla de pudín de chocolate en lugar de cacao), pero quedaron húmedos y con ese rico sabor. Siento que voy encaminada a ese resultado ideal.

I hope you are in great shape and that this week you can achieve all those goals you set for yourself. ♥
For some time I wanted to prepare some moist chocolate cupcakes, but it always ended with a fluffy and soft result, which although they did not taste bad at all, was not what I was looking for.
I spoke with an aunt who makes chocolate cakes very well and she advised me to substitute vegetable oil for the butter in my recipe, as thanks to this small change I could get the ideal consistency.
I ventured then and prepared these delicious cupcakes in the company of my son. They were delicious, not as chocolatey as I expected from a little mishap with the cocoa powder (they sold me a mix of chocolate pudding instead of cocoa), but they were moist and with that rich flavor. I feel like I'm on my way to that ideal result.
I tell you a little about the recipe below so that you can prepare them, I assure you that you will love them.

- 2 tazas de harina de trigo leudante
- 1 taza de azúcar
- 1/4 de taza de aceite
- 2 huevos
- 1 taza de leche líquida
- 1/2 taza de café concentrado
- 1 cucharada de vinagre
- 1/3 de taza de cacao
- 1/2 cucharadita de bicarbonato
- 1 pizca de sal
- 2 cups self-rising wheat flour
- 1 cup of sugar
- 1/4 cup oil
- 2 eggs
- 1 cup of liquid milk
- 1/2 cup of concentrated coffee
- 1 tablespoon vinegar
- 1/3 cup of cocoa
- 1/2 teaspoon baking soda
- 1 pinch of salt
Primero vamos a preparar la buttermilk casera, para ello necesitamos colocar la leche líquida junto a la cucharada de vinagre, mezclamos bien y dejamos reposar por 10 minutos.
First we are going to prepare the homemade buttermilk, for this we need to place the liquid milk next to the tablespoon of vinegar, mix well and let it rest for 10 minutes.
En un envase grande vamos a comenzar a batir los ingredientes líquidos, mezclamos el aceite junto a los dos huevos.
Luego incorporamos la buttermilk.
In a large container we are going to begin to beat the liquid ingredients, we mix the oil together with the two eggs.
Then we add the buttermilk.
Hacemos lo mismo con los ingredientes secos. Colocamos el azúcar, la harina, el cacao, la pizca de sal y el bicarbonato. Mezclamos muy bien.
Agregamos poco a poco al bowl donde están los líquidos. Por último agregamos la media taza de café.
We do the same with the dry ingredients. We put the sugar, the flour, the cocoa, the pinch of salt and the bicarbonate. We mix very well.
We add little by little to the bowl where the liquids are. Finally we add the half cup of coffee.
La mezcla va a quedar algo líquida, no debes agregar más harina pues puedes terminar con unos cupcakes gomosos.
Colocamos la mezcla en nuestra bandeja de cupcakes, yo he utilizado una de silicón. Con estas cantidades he logrado 14 cupcakes.
The mixture will be somewhat liquid, you should not add more flour because you can end up with some gummy cupcakes.
We place the mixture in our cupcake tray, I have used a silicone one. With these amounts I have made 14 cupcakes.
Cocinamos en el horno hasta que al introducir un palillo este salga completamente limpio.
Cook in the oven until inserting a toothpick comes out completely clean.
