Greetings! Here in Venezuela there is a place where they process it and it is like a kind of spiced cassava, it is called Mañoco, they use it to give more consistency to soups, to make salads, to eat it alone with meats and so on. The cassava is a delicious and very healthy product really, and there are places in the world where it is quoted as something expensive, we are lucky that I was part of our artisan production, you in your country and me in mine haha I really liked your publication and how you detail the procedure, you are quite passionate about these things that for many would be simple but that really has a good degree of difficulty.
