nother day of the event and it was my Filipino colleague's turn to cook. After having some Thai food the other day, he was craving for more so he made some 'Pad Kra Pao' for our staff meal.

Instead of using minced pork, he used pieces of boneless chicken instead but every other ingredient was as authentic as it gets. Fish sauce, fresh chilies, garlic and Thai basil went in to stir fry with the chicken. Season to taste with some salt and a little more fish sauce and the dish was done.

He also cooked everyone a side of sunny fried egg that were crispy on the edges and the yolk runny and creamy. It paired to wonderfully with the 'Pad Kra Pao' and white rice that we simple cooked in a rice cooker. The savouriness from the yolk mixed with the salty, spicy and basil infused chicken was an amazing pairing.

A super delicious lunch but made with inexpensive ingredients and not to mention fast and with minimal prep. A recipe that anyone who cooks should have in their arsenal. Absolutely yums! ~~
