Season 4 pieces of salmon with salt and pepper.
Heat 3 tbs olive oil in a large and deep frying pan, sear the salmon for about 3 minutes on each side and remove from the pan.
In the same pan, melt 3 tbs butter, sauté a few minced garlic cloves, add 1 small box of cherry tomatoes (cut in half), a pinch of crushed red pepper, 3 tbs white wine. Cook for 5 minutes.
Add 2 cups of fresh spinach and a pinch of salt. Cook for 3 minutes.
Add the salmon pieces back to the pan, 3 tbs lemon juice. Cook the salmon for 5 more minutes and baste it with all the juices.
