One enjoyable way to preserve foraged apples is by making apple leather. This healthy snack is not only simple to prepare but also packed with natural sweetness and goodness.
With the price of commercial fruit leather climbing, making it at home is a great solution. Not only is it easy and cost-effective, but it also gives you control over the ingredients so you can avoid added sugars and preservatives.
Around this time, the apples are very ripe. Once the frost hits, most of them will fall to the ground.
I picked a basketful to make apple leather. This snack is loved by everyone—it's chewy, tangy, sweet, and nutritious!

Here's how I make it.
Homemade Apple Leather Recipe
Ingredients:
6-8 medium-sized apples (variety of your choice, sweet or tart).
Honey, maple syrup, or sugar, depending on the sweetness of your apples. (optional)
2 tablespoons lemon juice (to enhance flavour and prevent browning)
1 teaspoon Cinnamon or any preferred spice (optional for added flavour)
Instructions:
Wash and core the apples, removing any blemished parts.
Cut them into quarters or slices; there's no need to peel them, as the skin adds flavour and nutrients.
Place the apple slices in a large pot with a little water (about 1/2 cup) to help them steam and soften.
Cook over medium heat until the apples are soft and tender, about 15-20 minutes.
Once the apples are cooked, transfer them to a blender or food processor. Add lemon juice, sweetener (if using), and cinnamon.
Blend until smooth. Taste and adjust sweetness or acidity if necessary.
Pour the apple mixture onto a baking sheet lined with parchment paper or a silicone mat.
Spread it evenly to about 1/8 to 1/4 inch thick.
Ensure the edges are slightly thicker to prevent them from drying out too quickly.
Put in the dehydrator for 6-8 hours at 60-75°C. Check periodically until the apple leather is no longer sticky to touch and peels away easily from the parchment.
If using an oven:
Preheat your oven to the lowest setting (around 140-170°F or 60-75°C).
Place the baking sheet in the oven and slightly prop the door open to allow moisture to escape.
Once dried, let it cool completely.
Peel the apple leather off the parchment paper.
Cut it into strips.
Or roll them up for easy snacking.
You can store the apple leather in an airtight container at room temperature or in the refrigerator for up to a month. For longer storage, you can freeze it.
