Hello, Sunday from southern Thailand! I hope everyone is well and having a bright day.😃
For today's holiday, I made a snack, a lightly sweet dessert: Corn Pie. However, I didn't have ready-made pie crust, and I was missing some ingredients for making the pastry dough, so I used so I used buns instead. It turned out impressively well; the bread and the corn filling paired together perfectly. Its simplicity makes it ideal for making at home. Here's how.

🌽 INGREDIENTS
- 1.5 cups boiled corn kernels
- 1/2 cup plain milk
- 1/2 cup whipping cream
- 1/2 cup sugar
- 50 grams granulated sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 2 tablespoons cornstarch
- 3 tablespoons water
- 1 egg yolk
- 1 tablespoon fresh milk (for egg wash)
- 4 buns
🫕 PROCEDURE

- Mix the egg yolk and fresh milk together until combined. Set aside.

- First, I'll prepare the bread cups. Take the buns and cut off the tops. Remove the inner bread to form a cup shape, just like in the picture you see, friends.

- Brush the edges of the bread cups with the prepared egg yolk and milk mixture.

- Then, place them in the oven. Bake using both lower and upper heat at 160 degrees Celsius for 10 minutes. This will give you lightly baked bread cups. Remove them from the oven and let them cool on a rack.

While waiting for the bread cups to bake, I'll prepare the corn filling. Add the fresh milk, whipping cream, granulated sugar, salt, vanilla extract, and boiled corn to a pan.
In a small bowl, mix the water and cornstarch together. Set aside.

- Place the pan on the stove over medium heat. Stir the mixture until combined and the sugar has dissolved completely. Wait until it boils.

- Gradually add the prepared cornstarch and water mixture. Stir continuously over medium heat until the entire mixture is cooked and has thickened.

- Turn off the heat and let it cool.

- Fill the bread cups with the corn filling. Brush the edges with the egg yolk and milk mixture before putting them into the oven.

- Bake using both lower and upper heat at 190 degrees Celsius for 15 minutes.

- When the time is up, remove the corn pies from the oven and let them cool down. They are very delicious when eaten warm.

- The flavor is lightly sweet, with a natural sweetness from the corn. It's well-balanced and not cloying. The filling is creamy and moist.

- The bread crust, baked until crispy on the outside but still soft and fluffy on the inside, offers a delightful contrast in texture with every bite.

- It's best enjoyed warm, when the filling is still soft and the bread crust remains crispy. You should try making it yourself. It's simple but delicious and satisfying, making it a perfect snack for a truly relaxing holiday.
Thank you all for visiting. See you soon 🤗❣️

Corn pies are commonly found in bakeries here, but I adapted them by using Bundt bread instead of pie crust.
