Lol. Must be funny watching the reactions of a first timer trying the dish of the day. I go along with the chips and beer solution though and maybe skip the chilli dishes. I don't know how many hours you hang around drinking afterwards but it sounds well organised.

it is remarkably well organized now but it wasn't always that way. It took a lot of doing things wrong before we did them right. Thankfully nothing catastrophically bad has ever happened but we have had some instances of bus drivers getting lost or even losing people at some remote hiking trail. Then of course there is the occasional run in with overly zealous national park rangers.
oh and the reaction of first-timers is normally very funny. There are a lot of foreigners that think that because they like hot sauce that they can handle the Thai notion of spicy. They are almost always incorrect.
