I am in the mood to cook again, today. Actually, I really love cooking even just simple dishes for my family every day. And since the day I joined here in Hive Platform, I am always excited to share my simple home cooked dishes to you too.
For today's menu, I cooked a soupy viand for our lunch because the weather is still gloomy and still a bit colder than usual. I decided to cook "Pork Rib Stew or Nilagang Buto ng Karneng Baboy.”
I chose pork bone instead of just the usual pork (meat) because it has more nutrients and it also gives a richer flavor especially to hot soupy dishes like the one I'm going to share on this post.
So, here's how I prepared and cooked it in my own way.
Pork Rib Stew or Nilagang Buto ng Karneng Baboy
INGREDIENTS:
- Pork Ribs
- Potato
- Chayote
- Banana Plantain
- Cabbage
- Long Chili
- Onion
- Ginger
- Tomato
- Knorr Cube
- Ground Black Pepper
- Salt
- Canola Oil
- Water
PREPARATION:
Gather all the ingredients on the table.
Wash and clean pork ribs.
Wash and peel potato, chayote and banana plantain. Then cut or slice potato, chayote and banana plantain in a bigger size that will balance or match the size of the pork ribs.
Then wash the tomato and slice.
Peel the onion and garlic and then slice.
Wash the cabbage and long chili then cut the cabbage and then set aside.
I divided the portion of onion into half: 1/2 for sauteeing and 1/2 portion to be added freshly on the dish later.
Now that the preparation’s done, let’s get ready for cooking.
COOKING TIME:
Heat a small amount of canola oil in the pan, then sautee onion and ginger until aromatic.
Add pork ribs, stir and sear until it changes color from pinkish to golden brown.
Add about a spoonful of ground black pepper to enrich the flavor and to make it a bit spicy. Stir to combine. Then add water.
Cover the pan and let the water boil for about 25 to 30 minutes or until the pork becomes softer.
Add the tomato, long chili and the half portion of onion that I set aside earlier. Cover again and continue boiling it for a few more minutes.
Then, put the Knorr cubes and season it with salt. Cover and continue to boil.
After 3 minutes, check if the meat is already soft and tender.
Add the potatoes, chayote and banana plantain. Mix slowly to combine. Then cover again and continue to boil until the veggies are already cooked.
Lastly, add the cabbage and continue cooking for just about 2 minutes to avoid the cabbage from being overcooked. And here it is… my own version of home cooked pork rib stew.
Now, let's transfer it to a different bowl and serve.

Wahhh, ang sarap and complete rekado, banana is seriously the best in sinigang, same woth Potato. We actually just had a sinigang kahapon, buto buto rin. But without veggies, sadly. Huhu. Still, it taste the best. But now I feel like having them again tomorrow, maybe i'll put Banana too 🤤🤤🤤

I am calling that dish a Potchero, I also prefer to use pork ribs since it's more tasty and there are bone marrows inside the bone. I usually use add yellow corn on that dish since it adds sweetness on the dish. I will plan to cook that again, maybe on my free time.

Pork stew and pochero are somewhat alike and it depends on how we cook it. I also use sweet corn in my pochero and might be posting it soon here.
