I am still so blessed today because, as always, I can cook delicious and nutritious food for my family. Having food on our table and an active and healthy body to do any work is a great blessing. So, I am always grateful to our Almighty God for this blessing.
I was again so happy yesterday seeing my family so contented and so delighted with the food that I served them especially that was a gloomy day. I cooked "Pork Pochero" for our meal yesterday.
Pochero is a classic and slightly sweet savory Filipino food made of pork (it can also be chicken or beef) with some veggies especially banana plantain or "banana saba" that adds a distinct sweetness to the dish.
So, here's my version of pork pochero.
My Yummy Pork Pochero
INGREDIENTS:
- Pork
- Potato
- Carrot
- Banana Plantain
- String Beans
- Cabbage
- Sweet Corn
- Onion
- Garlic
- Tomato
- Long Chili
- Tomato Sauce
- Ground Black Pepper
- Pork Cube
- Salt
- Soy Sauce (originally fish sauce, but I changed it due to my daughter’s preference)
- Canola Oil
- Water
PREPARATION:
Wash the pork thoroughly and cut into chunks.
Wash and peel potatoes and then cut.
Wash and peel carrot then cut into your desired size and shape.
Wash and cut the string beans.
Wash and cut sweet corn in quarters.
Peel and wash the onion then cut it into small pieces.
Crush and peel the garlic then cut it into small pieces.
Wash tomatoes and cut them into small pieces.
Wash and clean the cabbage and then cut them.
Wash the green or long chili.
Set them all aside and get ready for cooking.
COOKING TIME:
Heat some canola oil in a pan. Fry the banana plantain until slightly brown. Then set aside.
Fry carrots and potatoes until slightly brown and then set aside.
Slightly fry the string beans then set aside.
In the same pan, sauté the onion and garlic until aromatic. Add the tomatoes and sauté until soft enough to crush.
Then add the pork, and sauté until the color changes.
Add soy sauce or fish sauce and a pinch of salt.
Then, add water and cover. Let it simmer until the pork becomes tender. When the pork is tender enough add the sliced sweet corn.
Pour in tomato sauce, ground black pepper, and the pork cubes.
Give this a good stir before covering it again for a few minutes.
After a few minutes, add the green chili, potatoes, carrots, and string beans, and a little later, add the banana plantain.
Cover again for another few minutes and then put in the cabbage. You can also add a small amount of sugar or canned pork and beans to make it more flavorful (optional), but for me the unique sweetness of banana plantain is flavorful enough to balance the taste.
So, here's my yummy hot pork pochero.
