Today, I want to share the dessert I made last Sunday. We all love to have dessert every after-meal. My family always loves to have this sweet course after lunch and dinner. It always gives us pleasure and satisfaction after eating our main course.
So, here's the dessert I made last Sunday. I call it " Peach Mango Ice Cream Cake" because of the texture or consistency of the cream that tastes like ice cream at the same time a cake because you can still taste the melted crackers in it. Without further ado, let's check and see how it was done.
" Peach Mango Ice Cream Cake"
INGREDIENTS:
- Peaches in can
- Mango
- Cream Cheese
- Creamer
- Evaporated Milk
- Condensed Milk
- Tiger Crackers (Chocolate and Vanilla Flavor)
- Vanilla Extract (optional)
PREPARATION:
Chill the creamer and evaporated milk overnight.
The next day…
Wash and slice the mangoes.
Open the can and slice the peaches. Then set aside.
In a big bowl, mix cream cheese and evaporated milk. (be sure that the cream cheese is at room temperature only)
Mix them well with the condensed milk. Then add the chilled creamer and chilled evaporated milk. We mixed them using a whisk because we don't have an electric hand mixer, yet. Mix them until it becomes smooth and a bit thickened. Then set aside.
Prepare a bigger Tupperware or molder. Arrange the crackers at the bottom of the container.
Top with sliced mangoes and peaches.
Then pour some cream mixture, and flatten the cream to make a layer.
Repeat putting some crackers and then sliced mangoes and peaches for the 2nd layer. Then pour in the remaining cream.
Flatten the cream again then top some bigger slices of peaches in every corner of the container to make it look nice… then sprinkle some crushed chocolate crackers to make it more flavorful.
Then refrigerate it for at least five hours or overnight in the freezer.
After freezing it overnight, transfer it to the chiller for a couple of hours. Before taking it out of the fridge and eating it.
When it’s a bit softer, you can cut and serve. Here’s a slice!

Ugh, this dessert is making me hungrier! I was wondering how you could eat it when it was in the freezer but then you transferred to the chiller before eating. hihi makes sense.
