Greetings hiver friends,
I am back for another episode of the simple life I am living. Here, I will be sharing the moment with my nephew. Cooking with my buddy for our Nanay's 65th birthday. Her birthday was in April 12, but I think posting this on Mother's Day week is timely. We had simple dishes to celebrate it by cooking Pansit and Biko, which then shared for everyone in the house and to our neighbors.
From the bad weather we've had as soon as I got there, thats the day we had rays of sunshine. We had a bright day after her birthday so it was easy to move around the kitchen. I thank God for the graces that she received. The love and life. I just prayed for her health to improve without pain and discomfort.
BIKO Cooking time
Now that we got the glotinous rice that our cousin Annabel shared, it was sent via the pulley over the flood water at the river. It was time to cook it. Let me introduce you to my buddy in the kitchen. My nephews were the volunteers. I was amazed how helpful they were and the fact that they know how to do it by themselves. They gathered the pot, and pan. They boiled and cooked the glotinous rice first. Then set aside as they prepared the coconut milk.
After husking and grating the coconuts, they used about 6 for 2 kilos of glotinous rice ot 'pilit', it was then pressed tp extract the milk out from the grind. I was watching them as they did it. They actually had fun.
Then fired up the kawali pan to make 'latik'. Its the combination of coconut milk and the brown sugar. Making the latik takes you time of making the Biko. It took us over an hour to stir it. It was like cooking maple syrup. We had to stir and stir until we achieved the right consistency. It has to be stirred slowly.
I then helped out stirring the the latik. Its fiery hot in the kitchen.
It was all done. We mix it together with the set aside cooked glotinous rice. We enjoyed it after. It was not much but having biko and pancit on birthday is kind of special. We don't use to having cake, though cake is okay. But traditionally, we only have the biko and pancit. It was good. They were shared to the neighbors and kids. Nanay were glad.
Celebration in a simple way by cooking for your love is the best gift we can give. Having biko is kind of special to us during birthdays. Cake is a new trend, but nothing beats biko full of love.
