The Last Pepper Harvest - by Sunscape

The vegetable garden is almost done for the year. I still have a few plants that will continue growing throughout the cool fall weather. However, the peppers were done and now I had to #preserve the last few.

Previously, I had chopped and frozen the peppers all season long. I had no more space in the freezer so the only other option was to dehydrate the rest.

This was a full tray and it took me a while to de-seed and chop them.

I put them onto silicone mats in the dehydrator and set the temperature at 122°F. Unfortunately, I did not notice how long it took them to dry. Sometimes I forget to pay attention to little details like that.

Once they were finished #dehydrating, I put them into a quart-sized Mason jar and vacuum-sealed it. I now have two quarts of dry peppers that I will be able to use in a variety of dishes. First I will use the frozen ones to free up space in the freezer.

Can you believe I found more Jalapeno peppers that needed to be dealt with too? I had made a round of poppers already, but, one can never have enough, right?

Gardening has been one of my favorite pastimes and passions for over 50 years and I am already thinking of my strategy for next year's garden. The peppers have all been processed and the raised beds are almost empty. Soon I will be amending the soil with compost for the winter season. Perhaps I will find time to sit down and read a good book. ;-)

Really nice! Such a good yield! You definitely have a green thumb! I dehydrated some zucchini yesterday and it made half a quart from 10 zucchini. They sure did shrink up when dehydrated!!

That is a great way to keep the zucchini, I have yet to do some in the dehydrator. Perhaps next year when I get more I will do so. Everything gets so tiny once it is dry, but a lot less storage space needed. ;-)

Very valuable lesson on how to take advantage of the last peppers from your crop in the fall season. Storing it in a jar after processing is a guarantee of having that food for different meals throughout the year.

Thank you, I like having options for storing the veggie harvest. Plus dehydrated takes up very little space.

I only hope I like having them dehydrated as I have not used them in that form yet. I shall see how they compare when cooked. ;-)

That would be interesting to know the difference. But fresh produce always give satisfying results.

You are a busy lady @sunscape! What gorgeous peppers you have, brilliant to have all that in storage now. You certainly have green fingers and are an excellent chef as well. Your hubby is a lucky man🤗

Awe, thank you! My husband sure does enjoy all the goodies I make and lets me know in a cute way when something he loves is getting low. I am sure your husband enjoyed your cooking all those years you two were together. ♥

Yup, I realized I have to plan next year's gardens to know where to plant the garlic next week...

Right! I have the same problem. Then, I also have to decide where to plant the onions in the spring . They were too crowded this year and should have been much larger. Lesson learned. I only have a few things still growing now. Mostly greens. I have to pull out the potato and sweet potatoes this week.
