Wild Scallions
Here it is again, another foraging post! Wild scallions are abundant this time of year in the north east! While these things tend to grow sort of year round this is the best time to get 'em for sure!
If you pull them up gently while holding a few clusters, you can typically get the entire thing, root included, and it smells so good! The only difference between these scallions and the store bought ones is that you have to clean them, and they're slightly tougher in some parts. But the best parts are that these babies are free, they're beyond organic and they're extremely local!!!!
There's not too much to say here really... I got home, cleaned them up, and started to chop them up to have in a small jar, ready to use whenever we need it.
But before having it ready to use and put away like that.. I made art!!! Well just cutting board art really, but here it is looking all nice and so green:
And last night I sprinkled some wild scallions on our pizza, it was really nice to have an extra little something there!
I like to eat wild foods because it feels to be the healthiest way to eat. Ok I had pizza... but what I didn't mention was that the pizza is grain free and made entirely with organic and local products. The crust is made from eggs and chees, and is not only grain free, which is a whole other post to write all on its own, and it's gluten free, but not made with weird substitutes that some gluten free products are made of... Just egg whites and cheese, simple, delicious, and feels like the real thing!
