If you liked Dark Souls 3, im pretty sure you will like Elden Ring aswell. Sekiro is somewhat different, because the gameplay is pretty different and more challenging. I've played Sekiro before the DLC came out, but im not done with it yet.
So far the DLC was quite the Challenge, but not undoable. I like that you somewhat can choose how hard you want it to be by exploring the areas and search the Scalutree Fragments. But there have been Players who did the DLC without the Fragments already.😂
