Because blue is the prettiest color, and it makes the clouds stand out.
Blue" is just the label our brains assign to the specific wavelength of light that happens to dominate our daytime atmosphere.
On Mars, the sky is butterscotch. Ours is blue because our atmosphere is different.
So we have a consistent way to describe a sunny day without needing a spectrometer.
