Fun fact: Did you know that Nigerian Jollof won the challenge against Ghanaian Jollof?😅

😊 It's the most wonderful time of year and just like every other Christmas in Nigeria, Jollof rice takes the spotlight.😋
Nigerian Jollof rice is a well-known meal with significant importance throughout West Africa, and it's a mainstay during festivals like Christmas.

I Love jollof rice because it is super tasty, colourful and nutritious. As it stands, just yesterday Me, Elder Sister and Mum went shopping for Jollof rice ingredients and other Christmassy things😋.

It's a huge tradition in my family for us to cook a big pot of Jollof rice with peppered beef/chicken to share with Neighbours and well wishers. This is a practice I grew up seeing my late grandma now my mum and prolly has rubbed off good on we the kids😆
To be fair it's worth it every year🌲

For my Non-Nigerian LOH friends, I will be using the opportunity to make a food post by sharing the recipe we use ahead of Christmas and it'll be jolly good to see you try out this jolly meal on Christmas with your family too. Without delay let's get right to it. Hope you enjoy😋

INGREDIENTS USED
✔️Parboiled rice (washed, partially cooked and drained out)
✔️Vegetable oil
✔️Goat meat (chopped in sizeable bits, washed, boiled and fried)
✔️Meat stock from cooked meat set aside in a bowl^
✔️hot chilli/atargu (chopped)
✔️Onions (chopped)
✔️Garlic (crushed)
✔️Seasonings and Spices (Knorr, Curry and thyme >we use the Spice supreme brand)
✔️Carrot (chopped)
✔️Green bell pepper (chopped)
✔️Spring onions
✔️Soy sauce
✔️Fresh Tomato and Tatashe/red pepper (blended paste)
✔️Dash of Christmas Love😆💝

Cook and lightly Fry meat in cooking pan then strain out

Add in your Blended paste, fry abit then add in chopped Onions and Crushed garlic

Add in your seasonings and spices, keep frying on low heat

Add your meat to sauce and stir, don't crush and still on low heat

Add in your chopped carrots and lil portion of chopped green bell pepper

Your meat stock next and stir

Now the parboiled rice and mix well, keep stirring now on medium heat

Add in a tea spoon of soy sauce for taste, well it all depends on your taste buds, but watch it less it gets really salty

Crown it with chopped atargu and Spring onions. Stir for 5 mins and you're done

Dish out and Enjoy. Trust me, it taste better than it looks😋
As a Family we look forward to spending Christmas together every year and each year hasn't gone without a big pot of my favourite Christmas Jollof Rice.

Hello @queenstarr. What an interesting holiday tradition. I didn't know Nigerian Jollof rice was a well-known meal with significant importance throughout West Africa and a mainstay during festivals like Christmas. I can just see the ladies all helping to prepare the meal. Although I think I'd have to substitute the meat for chicken or beef. I've never eaten goat.

Nope, not Biryani.

I can make eggs 🥚 😁 that's about it! I need to train cooking sometime. Lol

😂 Skills is needed when cooking or frying eggs too. If you can make eggs, toast bread, make a decent cuppa, that's a great thing. The rest will come easy with training😉👍
