It feels good to be participating for the first time in the Ecotrain Contest. Thanks to the Ecotrain Community and @charleywhittal for initiating such interesting topic as this.
Here in Nigeria,we have lots of soup and the most medicinal of them all is our Pepper soup with any seafood of choice like snails,crabs,oyster,shrimps, goatmeat,fish(whether dry,fresh or the stock one),etc. It is mostly consumed by the pregnant woman as it is a form of medicine before and after birth to help ease whatever pain they may feel.Personally I love pepper soups,because I am one allergic to so many things and pepper soups help calm this allergies.
For this contest,I chose to prepare Stockfish and dry fish pepper soup.
Stockfish is an unsalted fish and is dried using the world's oldest known preservation method - drying by cold air and wind on wooden racks. While our dry fish are slowly smoked over a period of time until it is dry. This is easily done by market women or kiosk owners.
This Recipe is very simple and mild but if course the spicing can be adjusted to personal preference. Also the ingredients are quite affordable I got my scent leave from our family garden and every other ingredients were already at home.
The following are the ingredients you'll need:
- Stockfish
- Dry fish (two pieces)
- Scent leave.
- Fresh Pepper(little)
- Dry Pepper
- Onion(little)
- A seasoning cube
- Salt (little)
So let's begin:
Step 1- Soak stockfish in water overnight or for 5 hours. Did mine over the night. This is because the Stockfish is hard.
Step 2- Wash properly,put them into a pot,cover lid and allow to boil for 15 minutes.
Step 3-Add already washed dry fish.
Step 4- Add all ingredients,except scent leave. Allow for 5 minutes.
Step 5- Add scent leave,allow for 2 seconds and your stockfish and dry fish pepper soup is ready.
Stockfish is packed with vitamins,lean protein,calcium and is low in calories and fat.It is highly nutritious such that after it has been dried,the nutrients are still reserved in it.
Dry fish has protein and essential vitamins in it too.
You really should try out this recipe. Trust me you'll love it. And oh,you are free to use any seafood of choice.
