Tripe Madrileña Style/Callos a la Madrileña...Eng-Spn

Hello, hello my dear friends who love good food. Happy beginning of the year to all of you.
Today I want to share with you a delicious recipe that my mother used to make, we are going to prepare some delicious TRIPE MADRILEÑA STYLE.

Ingredients:

1/2 kg of tripe (beef belly).
100 gr of chickpeas.
2 large potatoes.
1 medium carrot.
2 tomatoes.
1 small onion.
A piece of paprika.
1 sprig of chives.
Salt, pepper and garlic to taste.
A little cilantro for garnish.

Preparation:

Wash the callus very well and cut it into small pieces, put it in a pressure cooker with the chickpeas, add a little salt, water and cover.
We take it to high heat for 1 hour and 15 minutes approximately.

Uncover and check that the tripe and the chickpeas are soft, if they still need to be cooked we take them to the fire for a while more.

When they are soft add the potato and the carrot together with the sauce that we are going to prepare: put in the blender the tomato, paprika, garlic, onion, chives, a little bit of water and blend well, add this sauce to the tripe and let it cook until the vegetables are soft and the sauce is thick.

This preparation can be served with rice, pasta, yucca or the contour of your preference.

Finally serve and put a little chopped cilantro on top to decorate.

AHORA EN ESPAÑOL

Hola, hola mis queridos amigos amantes del buen comer. Feliz inicio de año para todos.
Hoy quiero compartir con ustedes una deliciosa receta que hacia mi madre, vamos a preparar unos ricos CALLOS A LA MADRILEÑA.

Ingredientes:

1/2 kg de Callos ( Panza de res).
100 gr de garbanzos.
2 papas grandes.
1 zanahoria mediana.
2 tomates.
1 cebolla pequeña.
Un trozo de pimentón.
1 ramita de cebollín.
Sal, pimienta y ajo al gusto.
Un poquito de cilantro para decorar.

Preparación:

Lavamos muy bien el callo y lo cortamos en trozos pequeños, lo ponemos dentro de una olla de presión junto a los garbanzos agregamos un poquito de sal, agua y tapamos.
Llevamos a fuego alto por 1 hora y 15 minutos aproximadamente.

Destapamos y revisamos que los callos y los garbanzos estén blandos, si aún les falta cocción llevamos al fuego un rato más.

Cuando estos estén blandos agregamos la papa y la zanahoria junto la salsa que vamos a preparar: ponemos en la licuadora el tomate, pimentón, ajo, cebolla, cebollín un poquito de agua y licuamos bien, esta salsa se la agregamos a los callos y dejamos cocinar hasta que la verdura este blanda y la salsa espesa.

Esta preparación la puedes acompañar con arroz, pasta, yuca o el contorno de tu preferencia.

Por ultimo servimos y le ponemos un poquito de cilantro picadito por encima para decorar.

That's an interesting recipe. We have beef belly soup here and beef belly stew is popular in Hungary, but it's different than yours. This looks good though, must taste good as well.
