Winter calls for hot meals with an extra bit of spice to keep us warm. I have a Mexican sister from LA that always talked about chilli con carne and I’m not afraid of a little bite. So I investigated and found my own cheat way of making this quick meal that is so so so tasty!
This is a regular go-to meal in our household during Winter. I made it for my family last night and there is NOTHING left over. Ok maybe a scoop of rice left over but that’s it!
Here’s how to make it.
CHEATS CHILLI & NACHOS
INGREDIENTS
The Chilli
500g minced beef
1 tin Mexican tomatoes
½ tin baked beans
2 Tbsp chutney
2 Tbsp Worcestershire sauce
1 tspn Crushed Garlic
Mixed herbs, salt and pepper
2 cups Basmati rice (Or any rice that you prefer)
The Guacamole
1 soft Avocado
1 tspn lemon juice
Salt and pepper
Toppings
Cream cheese or sour cream
Grated cheddar or Gouda cheese.
1 large bag of nachos
METHOD
Cook your rice to your liking. I have a microwave rice cooker so I love to use that to cook my rice. After 20 minutes it is perfect every time.
While the rice cooks, brown the mince with mixed herbs, salt and pepper, in a tablespoon of oil in a medium - large pot.
Add the crushed garlic and herbs and spices while it is browning.
Once browned, add the can of Mexican tomatoes and baked beans, as well as the chutney and Worcestershire sauce.
Mix well and allow to cook down on medium - high heat. Stir often so that it doesn’t burn on the bottom. About 15-20 minutes. Some of the liquid should cook off and leave behind the amazing flavour!
While the mince cooks make your Guacamole. Simply mash 1 avocado in a bowl, add the lemon juice and some salt and pepper. And you’re good to go!!! So easy.
Ready to plate
This can be served in large dishes for self service or you can plate up for everyone.
I put the rice at the bottom of a wide bowl. Added a few big spoons of cheats Chilli con carne.
Spread the nachos around the edge of the bowl.
And then added a large dash of cream cheese and guacamole on the side.
It’s really simple to make and made the whole family happy!!!! And that’s a win!! Even my fussy son loved it.

That food looks very tasty, I have never eaten Mexican food, but I would like to eat it, some of the ingredients that you have used I do not think it is easy to get them here in Venezuela.

Meals like this appeal to me; no real fuss, simple but tasty. I'd say my pizzas are a cheat meal as I find them pretty easy to construct and super tasty. Not to boast, but I'm pretty good and making pizza; it's all in the quality of ingredients and ratios of toppings to one another.
Anyway, I'd eat this cheat meal of yours anyday. Looks pretty legit.
