-Preparation of the stew
We boil our prey in water, each one separately, with salt to taste and a few cloves of garlic.
When we have our clean and chopped seasonings we can sauté them with oil and our seasonings each one to your taste, when we have our boiled and chopped prey also to our taste we add it to our sautéed seasonings leaving them a reasonable time, and then add your raisins and olives. The capers washed to remove excess salt, we also add them.
Add water and to my taste I like to add two pieces of banana leaves (well washed), I feel it has a unique flavor.
To thicken dissolve two tablespoons of flour bread in a bowl of water and add and cover and keep the time that is reasonable for you and the thickness to your liking, can not be with much broth as it would damage our hallaca when filling.
With the dough is the easiest and fastest part.
This time I will use 2 packets of bread flour, salt, water and onoto in oil.
Adding a package first in a large bold and add salt to taste and add water while kneading and gradually add the second package of flour bread and water and onoto oil.
You can also add the broth from some of the previously boiled fish, it helps to have more flavor. We continue kneading until we have a very soft texture, easy to handle.
•Grandes
•Medianas
•Pequeñas
With the leaves for our hallacas, we clean them with lukewarm water and organize them as follows
•Large
•Medium
•Small
The wick is also chopped to have it ready, we chop it depending on the size of the Hallaca, a standard measure is 1.20meter.
For the decoration of our hallaca we usually use onion rings, paprika, an olive (stuffed or with stone) to my taste I will use stone olives, and a handful of 3 or 4 raisins.
•1 aceituna
•3 o 4 pasas
To proceed to assemble, let's have a container with oil and a mop to oil our sheet.
We proceed to stretch a medium or small ball as thin as we can, we add our stew and our decoration
-1 onion ring
-1 strip of paprika
-1 olive
-3 or 4 raisins
We close our hallaca, folding one side of the sheet and then the other, along with the ends, using another medium sheet to wrap it and another small sheet and we start using our chopped wick, positioning half of the wick under our hallaca, cross it and turn it around and it is under our hallaca again and repeat the process but now vertically and we do it twice.
Y culminamos cocinando aproximadamente 40 minutos
Pueden llegar hacer 50 o 60
A mí me salieron 66 hallacas en total🎉
Y solo queda disfrutarla en familia
And we finish cooking for approximately 40 minutes
