Colombian brunch

My wife’s aunt passed away a couple of days ago. She viewed my wife as a kind of daughter (as she had no children of her own). So, it was important that we were there during her final hours and are now in the process of putting her affairs in order.

Family members are visiting from out of town and the house is in a bit of disarray— emotions are still raw as we all process this loss.

Which means we all help out in any way we can, since not everyone is sleeping well and there’s much to do. My modest contribution this morning was preparing healthy scrambled eggs.

I used all the vegetables I could find in the fridge — peppers, zucchini, onions and tomatoes. Mixed the eggs with milk and spices it with salt, pepper, turmeric and some Italian herbs.

It turned out, beautifully, and we were able to offer some to a neighbor who stopped by to offer her condolences 💐

And, because this is Colombia, no meal is complete without empanadas and fried cheese balls, which one of my wife’s cousins graciously brought to the table.
