Dear friends, today I share one of the meals that I make at home, in Venezuela it is customary to eat soups on Sundays. And in my home it is a task that I enjoy doing, my wife and my children say that I have a good seasoning. Well, it is a way to please them, I try to make it possible in a different way and so that in this way they can know the flavor of each vegetable and in this way they can determine the flavor of each food.

Queridos amigos hoy les comparto una de las comidas que realizo en casa, en Venezuela se tiene por costumbre comer sopas los domingos. Y en mi hogar es una tarea que disfruto hacer, mi esposa y mis hijos dicen que tengo un buen sazón. Bueno es una manera de complacerlos trato en posible hacerla de forma diferentes y para que de esta manera pueden conocer el sabor de cada verdura y de esta manera pueden determinar el sabor de cada alimentos.

So I present a rich beef rib soup but with only two vegetables, in this case the squash, which in addition to having good nutrients gives it a good color, additionally the flavor is medium sweet and the other was the yam that In addition to being high in fiber and good nutrients, the flavor is neutral and in this way the diner can differentiate the vegetables and taste the flavor of each one.

Por lo que les presento una rica sopa de costilla de res pero con solo dos verduras, en este caso la auyama que además de tener buenos nutrientes le da un buen color, adicional a ello el sabor es medio dulzón y el otro fue el ñame que además de tener alto contenido en fibra y buenos nutrientes el sabor es neutro y de esta manera el comensal puede diferenciar la verdura y de degustar del sabor de cada una de ella.

Ingredients used

½ kilo of Beef Rib of Res

½ Kilo of Auyama

½ Kilo of Yam

Onion, Chives, Sweet Chili, Coriander, Salt and Spices to taste.

Ingredients utilizados

½ kilo de Carne Costilla de Res

½ Kilo de Auyama

½ Kilo de Ñame

Cebolla, Cebollín, Ají dulce, Cilantro, Sal y Especias al gusto.

The preparation

The meat to be cooked is placed in a pressure cooker, in approximately 30 minutes, after this time, the cooking level of the meat is evaluated if it is as expected, the vegetables are incorporated, it is left to boil until the yam is moderately soft At this point the onion, chives, sweet pepper, salt and spices are added (these can be fried if you prefer) continue cooking until the yam is soft at this point the coriander is added, the soup is turned off and let it rest for about 15 minutes.

After this time it is served and tasted of a rich and simple soup.

La preparación

En una olla a presión se coloca la carne a cocinar, en 30 minutos aproximadamente, pasado este tiempo, se evalúa el nivel de cocción de la carne si es el esperado se le incorpora las verduras, se deja hervir hasta que el ñame este medianamente blando en este punto se le incorpora la cebolla, cebollín, aji dulce la sal y las especies, (estos si lo prefieren se pueden sofreír) se sigue cocinando hasta que el ñame este blando en este punto se le incorpora el cilantro se apaga la sopa y se deja reposar unos 15 minutos.

Pasados este tiempo se sirve y se degusta de una rica y sencilla sopa.
