Clams are one of my favorite seafood, whether they are fried or boiled into soup,
The taste is very sweet and delicious.

When fried, it will add ginger shreds, nine-layer pagoda, and smashed garlic.
Put the ingredients into the oil over the high fire and saute before adding the clams.
Fry them quickly until their shells are open.

It won’t be so delicious if you cook it longer.
So we have to make a quick decision.

The same is true when you cook soup, and wait until the shell is opened.
The fire has to be turned off, otherwise its natural sweet taste will be absorbed by the soup.
It becomes dry and tasteless.

Basically, a restaurant cooks this dish well,
I believe that other dishes should not be too bad,
Therefore, it can also be used as a dish to judge the restaurant's kung fu ^^
