Chicken in a delicious aubergine cream, accompanied with rice and a slice of fried banana By: @vemaya
Hello dear #foodiesbeehive family, today I want to present a super delicious dish for eggplant lovers, like me, this recipe was invented by me at an impromptu family gathering at my house mother, where it had few ingredients, the result was so wonderful that I wanted to repeat it at home. Next I am going to explain the preparation of this tasty meal.
INGREDIENTES
4 Cuadriles de pollo
1 Berenjena
1 Cebolla
4 Ají
1/2 Cabeza de ajo
1 Cucharada pequeña de curry
1 Cucharada pequeña de pimienta negra
1 Cucharada pequeña adobo
2 Cucharadas pequeña de sal
2 Cucharadas pequeña de azúcar
1/2 kg de arroz blanco
1 Platano
Aceite vegetal
INGREDIENTS
4 chicken squares
1 Eggplant
1 onion
4 Chili
1/2 head of garlic
1 small tablespoon of curry
1 teaspoon black pepper
1 small tablespoon marinade
2 teaspoons of salt
2 small tablespoons of sugar
1/2 kg of white rice
1 banana
vegetable oil
PREPARATION
Wash and dry the eggplant well, then place it over direct heat in the kitchen, turning it with tongs or a fork until all the burned skin is present. We lower the heat and with a knife we remove all the skin then we chop it and we take it to the blender with the salt, pepper, marinade, curry and sugar, we blend until a homogeneous sauce is left.

We clean and julienne the chili pepper, onion and crush the garlic, we take these ingredients to a pan, fry over high heat until we see the crystallized onion, at this point we add the chicken seasoned with salt, marinade and curry, we let it cook until it is sealed together with the aforementioned ingredients.Once the chicken is sealed, we add our aubergine cream, leaving it on low heat for about 10 min until it boils.Once it has boiled, we go on to serve it on the plate, accompanying it in this case with rice and a slice of fried banana
