Good day dear mates! Today I'll perform not in usual role for me and want to share with you recipe of mint cookies which are suits for the middle of this hot summer!
Honestly this cookies can be cooked during all warm season. And delight us with it's freshness and flavor.
But let's move to recipe and prepare all ingredients. For our coockies we'll need:
🌱 fresh mint from 10 to 20 g - a good bundle. You only need to take the leaves without sprigs
🌱 sugar - 100g
🌱 butter - 90g
🌱 egg - 1 chicken egg, but you can use have 7 quail eggs.
🌱 flour - 240-250g depending on the brand and size of the egg, I used 250g.
🌱 leavening agent - 1 tsp. without a slide
🌱 salt
🌱 thyme - as desired. It's better to add lemon thyme in whole leaves - really great to complement the mint flavor! Or you can also add lemon zest instead of thyme.
Now let me to describe process of cooking itself.
At the beginning send fresh mint leaves to a blender with sugar and grind. In addition, now is a good time to prepare mint sugar at the same time: put it in a jar, close it tightly and store it in the refrigerator. You can also freeze it in cubes in an ice mold, and then - pour it into a bag for compact storage. I add peppermint sugar to baked goods and tea.
Next, we need to add 90g of room temperature butter to the resulting mixture and knead everything together with a fork.
Then add the egg, and again with a fork mix everything into a homogeneous mass.
Add a little salt, fresh thyme leaves or a little lemon zest.
Combine flour and baking powder and add to the liquid mint mixture.
Mix first with a fork and then with your hands until the dough is smooth and holds it's shape well like it did my kid.
Send the dough to rest in the refrigerator for 1 hour or 30 minutes in the freezer.
Form balls the size of walnuts, roll it in flour. And finally we send everything to bake in the oven for about 15 - 20 minutes at 180°. But I should note that this time the cookies took a little longer to bake, about 23 minutes.
And when it's done, it's delicious to eat warm peppermint cookies with cold milk! You must try it!
