Easy to make Egg Rolls
This recipe is so easy and simple to put together.
Ingredients:
1 lb of the meat of your choice (I used pork)
1-2 Tbsp Minced Garlic
1 package of Egg Roll Wrappers
Salt and Pepper (to taste)
3 Tbsp Teriyaki Marinade (soy sauce works great too)
2 Tbsp Ground Ginger (fresh is the best but dried works great too)
1 bag of Classic Coleslaw mix

Cut the meat into bite size pieces and brown in a pan with garlic, ginger, Teriyaki sauce, salt and pepper (if you want some heat, throw in some red pepper flakes).
Add the coleslaw mixture to the top of the browned meat and sweat it for 2 minutes (don't go too long)
Mix together thoroughly and set aside
Now is the time you want to heat the oil you will be frying in (I used a fry daddy, but a regular pan with oil works just as well).
Grab your Egg roll wrappers and a small bowl of water (this is used to seal the egg roll after wrapping)
Place the mixture in the center of the egg roll and begin the rolling process.
Fold both sides in over the mixture
Roll almost to the end and dip your fingers in the water and dab the end before rolling completely (this seals the egg roll so it holds together during frying).
Once you have rolled all the mixture or used all the wrappers begin placing a few at a time into the oil (more than a few at a time tends to slow the process and could end up making the egg rolls taste oily).
Cook until golden to dark golden brown.
Serve them up with some wassabi or hot mustard..
