Chocolate Raspberry Stuffed Rolls with Raspberry Drizzle
Today I decided to create a new recipe. My clients LOVE it when I make them my taste guinea pigs. I do love to create new baked goods and think outside the box when it comes to culinary variations.
These rolls turned out nicely and were a hit!
Ingredients:
Rolls and stuffing:
Sweet Roll dough of your choice (I used my bread maker sweet bread recipe)
Raspberry Jam (spread, jam, or jelly will all work great. Just spoon directly from the jar)
Chocolate chips (use whatever brand you prefer)
1/4 cup butter (melted)
Begin by cutting about a 2-3 inch portion of dough
Flatten the cut piece of dough into a round circle
In the center of the dough place a dollop of the Raspberry Jam
Then on top of the jam toss 5-6 chocolate chips.
Pull the edges of the dough over like a blanket and pinch the dough together until it becomes a small stuffed ball.
Place each roll into a baking dish (don't worry if they get a little messy, it took me 3 tries to get them to stay together.)
Once all the rolls are stuffed and placed into the baking dish, take the raspberry jam and place small dollops over the tops of the rolls. then sprinkle some of the chips over the top as well, then sprinkle with a sparse amount of brown sugar. Then take the butter and drizzle over the top of the entire dish of rolls (this helps with the rise and baking process).
Preheat the oven to 350 degrees
Find a warm spot on the stove top and cover and allow the rolls to rise for 45 minutes to an hour (the rolls should double in size).
Your rolls should look pretty close to this.
Place the rolls into the oven and bake for 20-25 minutes. Turn the oven off and leave the rolls in the oven for another 10 minutes.
While the rolls are cooling a little start the Drizzle.
Raspberry Drizzle:
1 cup powdered sugar
2 Tbsp Heavy Whipping Cream
1 Tbsp Raspberry Jam (whatever you are using to stuff with will work great)
In a small bowl whisk together all the ingredients until smooth
Pour the drizzle into a sandwich baggie to drizzle the rolls.
Cut the corner of the sandwich baggie and drizzle the icing over the tops of the rolls
They look pretty, and the taste was lovely.

I am really happy you like it. This was an on-the-go creation today. My client wanted something a little different, so I came up with this recipe. I hope you stay tuned for other recipes to come.
