TacoCat (kinda) Cooks! #10: Yummy Crunchy Bae Bee Noodles! ๐Ÿœ

Hey Hive!

We're back with more of our home cooking! If you're unfamiliar with this series, it's where I showcase some of the food we've been making at home since we've been cooking a lot nowadays! Also I'm running out of content so yeah gotta make the most of it!

So the other day I had to cook dinner for only myself since Sean was out, and I decided to try this new packet of noodles we bought called Hae Bee Hiam dried noodles!

If you're wondering what Hae Bee Hiam is, it's a local condiment here in Singapore that is a little spicy and also crunchy since it's made of dried shrimp:

Here are the ingredients:

And the cooking instructions which are really simple:

But of course I'm not just gonna eat this plain since that will hardly consider a full meal. Here are the ingredients I used:

  • frozen broccoli
  • frozen cauliflower
  • egg
  • carrot
  • sotong you tiao (to air fry)

The Sotong You Tiao was leftovers we've had for some time. Sean had ordered from this company called You Tiao Man, which sells handcrafted halal fresh and frozen you tiao (or dough fritters). They have a variety of types of you tiao, and this one is made with squid paste and topped with sesame seeds!

Anyway, Step 1: was to pop those you tiao in the air fryer at 180 degrees C for 10 minutes! At the time same, boil the water.

Step 2: cut and wash the fresh vegetables; in my case it was the carrot.

Other than the noodles, the only thing inside the packet was the sauce sachet which was pretty big.

Step 3: once the water is boiled, throw the vegetables and egg in. I wanted to make a half-boiled egg since those are my favourite so I didn't crack the egg into the pot. Also since this was dried noodles it would be difficult to drain the water if the egg was cracked.

And after about 4 minutes, put the noodles in. Normally a soft-boiled egg would be done at 6-7 minutes but because only half the egg was submerged it was okay. I didn't fill the pot too much since I was going to drain it once the noodles were cooked.

In the meantime, prep the paste by putting it onto a plate.

Step 4: after 4.5 minutes, turn off the stove and scoop the egg out and into a cold water bath.

Step 5 (not pictured): drain the noodles and vegetables of the water and pour them onto the plate/bowl with the paste, then mix it all up so the noodles gets covered equally with the paste.

Step 6: peel the shell off the egg carefully.

And after taking the you tiao out of the air fryer, we get this!

I thought I overboiled the egg and it would become hard-boiled but thankfully it was perfectly half-boiled! The white was solid but the yolk was runny; just how I like it! Sorry for the poor plating but after mixing all the ingredients I couldn't really make it look nice.

The sauce was actually quite oily, but it gave the noodles the right texture and spice. There wasn't too much crunch compared to other hae bee hiam I've had but it was still really good and tasted just like what hae bee hiam is supposed to taste! And the dried shrimp bits still gave some contrast to the soft vegetables. The noodles themselves had quite a chewy texture too compared to other noodles, and overall it was really yummy!

If you've yet to try hae bee hiam and are not allergic, I definitely recommend it especially with rice! It adds a little spice kick and a different texture so it goes really well with plain staples!
