Apple Pie Muffin Cookies - Oh So Good! - by Sunscape

What would fall be without the fragrance of apple pie wafting throughout the home. Well, I have yet to bake a pie but these apple muffin cookies are a close second in my opinion. The hubby loves them too and we don't have to try and eat a whole pie in a few days.

Apple Pie Muffin Cookies


6 medium-sized apples, peeled, cored, and finely chopped

Blend with a mixer:
1 cup of brown sugar
1/2 cup of sugar
2 sticks softened butter (plus more for cooking apples)
1 teaspoon vanilla
2 eggs
Blend well until all wet ingredients are combined.

Sift together:
1 1/4 cups of flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt

Add the sifted dry ingredients to the wet mixture, add 1 3/4 cups of rolled oats, and stir until incorporated.

Spray two regular-sized muffin tins with cooking spray. With a medium-sized ice cream scoop, drop a scoop into each. Using the back of a spoon, press down the dough in the center to create a cup.

Bake at 350°F. for 15-20 minutes until the cookie cups are golden brown and set. The middle will rise but don't worry.

While the cookies are still warm, spray the bottom of a small juice glass or shot glass with oil. Press down firmly in the center of each muffin to create the cup. Let the muffin cups cool for 15 minutes before removing them to cooling racks.

Meanwhile, melt 2 Tablespoons of butter in a skillet over medium-high heat until it starts to brown. Add the apples and saute them until they begin to soften.

Add 1/4 cup of brown sugar, 1/4 cup of sugar, 2 teaspoons of cornstarch, 1/2 teaspoon of cinnamon, and 1/2 teaspoon of ground nutmeg. Mix well and let cool before filling the muffin cups.

Is your mouth watering yet? A drizzle of caramel sauce would have made this even more delightful. Alas, I did not have anything to make it with so perhaps next time. I froze some of them to try later and I'm hoping that they thaw nicely and will be just like freshly made Apple Pie Muffin Cookies.
