Making chili paste from home grown Trinidad scorpion peppers

These peppers are not the kind you want to eat raw, but you can surely cook it into many things. We decided to make a paste from the peppers and seeds inside. Using it will only require a teaspoon at most at a time, with over a million heat units this is some very hot paste. But tasty none the less.

I am glad we grew these this year, I tried a hot sauce last year with these peppers in it. So I really wanted to give growing these exotic peppers a chance in my garden.. And they did great. Now it is time to make something out of them. Carefully we harvest them without touching, and then brought inside for cooking later.

Cutting off the stems, we use everything else.. Seeds, skin and gland.

Ready to go, all cut up and will go in the food processor for more finely chopping up.

We also take some garlic and remove the husk and add it into the paste ingredients.

Getting out the food processor we will blend all of this together until it becomes a fine paste. Basil leaves grown from the garden were added as well, along with some onion. Upon shredding the peppers, the smell got quite intense.

Then we needed to cook it down, a respirator was required as the pepper fumes made you want to cough constantly. That is some strong stuff! The whole house smelled like spicy peppers for a good 12 hours after cooking it. Maybe we should made it outside..lol

You can add this to soups and many other things where you can dilute the paste into a recipe.

With the paste complete, I make a batch of home made mayonnaise. And add a half teaspoon at the time. After tasting I could have added a full teaspoon. But did not want to add to much the first time and ruin my batch of mayonnaise.

This is a really good way to have your chillies 'ready to use' at all times. I would like to add a little something to the recipe. Try it in this order: Instead of blending all the ingredients together and then boiling them down, start by sautéing the chilli (chopped), onion (diced) and garlic (finely chopped) in a pan with olive oil. It is important to add a little sugar at this stage so that the vegetables will caramelise a little. This will give a very special flavour to your puree. Then add the rest of the ingredients to the pan and blend with a hand blender.
Another tip: I hang the chilli peppers up to dry, and I also dry the rosemary, the thyme, and the basil. I then grind all of these together and mix them with some sea salt. This is how the spicy seasoning salt ends up in the jars. It lasts almost forever.

I should start drying my peppers, so far we have used them up almost as soon as they are picked. But if we start growing more we will surely need to find a way to store them.

Garlic and basil spicy mayo sounds delicious. I always have a few different kinds of spice in my fridge. This Mayan Cobanero sauce in olive oil is my current favorite. Nice garlic taste and at 30,000 - 50,000 Scoville Heat Units (SHUs)it has a pretty good kick. Goes with almost anything.

It is a match made in heaven, lol.. Oh nice, that Cobanero sauce looks really good. I will need to keep an eye out for it at markets around me. That is pretty spicy.. yum

So it is much hotter than regular chilli peppers? I got curious about it!

Trinidad peppers can be 109 to 742 times hotter than a Jalapeno.

That is what google told me.

Hehehhe maybe one day i need to test all types of peppers to check spice levels!! But it should be impossible to eat it raw if you say ! I like spice food but my body has a limit for that ! Specially in the day after 🤪

This paste is looking delicious and spicy. I like such home made things.
I also prepared such things at home but here I can't grow vegetables or chillies etc, that's why vegetables are not found fresh.

Careful with those peppers mate, I was hooked on Jalapeno Green Chilies, (4000-8500) units on the Scoville scale, until I experienced bad stomach problems, and now I am banned by the doctor to eat any spices. !LOL

I used to love making Tarantul as the Lebanese here call it. 5 green chilies, 4 garlic cloves, 3 parts ginger. Cut all into small parts and then stamp them all into one pulp. Put the pulp into a bottle and fill the bottle with fresh lemon juice. Let it sit for 2 days, and then you would have a bomb of a dip.

Sadly, nowadays I cannot touch it, but I am glad that you are aware of the problems and that you are indeed taking care.

That looks awesome. I make chilli paste out of scotch bonnet peppers which are nowhere near as hot but I love the flavour. Never thought of adding basil!

Oh nice, I need to make a paste with a pepper that is a more normal heat and not used for chemical weapons.. lol

Yeah it is a nice flavor, we have so much of it growing on my porch I try to use it in everything.

Hehe, that's why I stopped using Naga chillies and the like as I was trying to get more flavour into my dishes. I do love a bit of fire heat tho!
