Ohhh, my friend, what a super comment! This is cool! I have never tried that part of the lobster, I would have to eat it sometime; the most exotic thing I have tried is wild pig, lizard, capybara, turtle (eggs and meat), I don't eat them anymore for various reasons, especially linked to what the animals suffer when they are slaughtered. I have also eaten piranha, it is very good, well fried. And you can encourage you to try some of the recipes that are here, I assure you that none of them will disappoint you.
