Molten White Chocolate Cheesecake ❄️

❄️ Today I would like to share with you an alternative way to bake a Molten White Chocolate Cheesecake which I will put the White Chocolate lava outside.

❄️ It's super gooey, runny and fluffy with the Lava Sauce outside but the cake part is light and rich.

They are made with less sugar and only 9 ingredients combine together. It's simple to make and perfect for eat 😄

Preparation Time ⏳

It's take around 1 hour to complete.
 

Ingredients

 

For White Chocolate Cheesecake

  • 80 Gram of White Chocolate
  • 60 Gram of Cheesecake
  • 2 Egg Yolk
  • 2 White Egg (Plus a bit lime to make a meringue)
  • 2 teaspoon of Cake Flour

For White Chocolate Lava

  • 20 Gram of Milk Powder
  • 250 ML of Fresh Milk
  • 10 Gram of Sugar
  • 30 Gram of White Chocolate
  • 7 Gram of Corn Flour
  • 15 Gram of Butter

Instruction

 

For White Chocolate Cheesecake

 

  • Preheat the oven at 160°C.
  • Fill the pot with water and put mixing bowl on the top then add white chocolate and melt it by using low heat until white chocolate turning soft then remove the mixing bowl and set aside.
  • Place the cheesecake, egg yolk and flour to the mixing bowl step by step and mix them together.

Put the mixing bowl aside

Making a meringue!

  • Pour the white egg to the dry stainless steel bowl and whisk it constantly. Add the lime when they are foamy.

  • Continue whisk it until the white egg got to the soft peaks.

  • Pour half meringue into the batter mixing bowl and fold them gently.
  • Pour the batter to the meringue bowl and fold them gently again.

  • Cut the parchment and put inside the 6 inch baking pan.

  • Pour the batter to the baking pan and shake a bit to avoid the air bubbles.

  • Pour the boiled water into an extra pan and gentle place the pan of batter into it.

  • Bake for 15 minute.

  • Take the cheesecake out of the oven, place it onto the rack and cool it completely.

For the white Chocolate Lava

 

  • Pour the fresh milk to the cup of corn flour and stir them well then leave aside.
  • Pour the fresh milk, sugar, milk powder and corn flour to the pot by using low heat and mix them together until they a bit thicker. Then turn off the heat and move the pot aside.

  • Add the butter and white chocolate to the pot, Stir them together.

Pour the lava to the cheesecake and spread the lava until the lava cover all the cheesecake.

Finally sprinkle with milk powder.

Let rest 1 hour in the refrigerator before serving.
