Chinese Medicine Stewed With Boneless Pork Knuckle and Homemade Rice Noodles.

It's winter season here in Thailand so it's just colder than usual which I'm feel freezing cold and chilling inside the body every morning. 😅 I'm definitely a summer person. There are some people feel cold more than other and of course! I'm the one of them. 😆

So today I'll cook a healthy Chinese Medicine Stewed With Boneless Pork Knuckle and Homemade Rice Noodles to balance my metabolism and increased my body fat a bit so boneless pork knuckle is a perfectly choice.

Normally we can having Chinese Medicine Stewed with rice or with noodle so I'll keep my theme. A quality Stews! 💪

So I will make fresh flat rice noodles by myself. It's a bowl of slowing cook stewed with meat and served with homemade rice noodle with veggie and soft boiled egg.

There are many things combine together for this dish. And almost of them are homemade and I also harvested some vegetable from my garden too. ❤️

Boneless Pork Knuckle Medicine Stewed is rich and full of flavor and perfect for winter month. It's tastes delicious, amazing texture and absolutely healthy .

 

  • Starting with Boneless Pork Knuckle stewed which I used a lots of Chinses medicine herb which easy to make and need some time for stewed but the outcome was amazing.

Making rice noodles is such a challenge but once you can make it then it's not hard at all. You can make overload amount and safe the least for 3-4 days inside the fridge.

Each of the Chinese herb has its own medicinal properties.

  • Goji berries are great for liver and kidney.
  • Chinese yam is perfect for boost up the body and lung.
  • Female ginseng is well known for benefits to women health.
  • Yu Zhu is great for stomach, digest system and lung
  • Star Anise is good for health skin

Probably this is one of the most healthiest stewed on earth. 😆

Let's see the ingredients

For Stewed

 

  • 1 Kg Boneless Pork Knuckle
  • 1 Tablespoon Goji berries
  • 1 Tablespoon Chinese yam
  • 1 Tablespoon Female ginseng
  • 1 Tablespoon Yu Zhu
  • 1 Tablespoon Star Anise
  • 1 piece Ginger
  • 1 teaspoon Black Pepper
  • 3 Dried Shitake Mushroom
  • 2 Tablespoon light Soy Sauce
  • 2 Tablespoon Dark Soy Sauce
  • 2 Tablespoon Seasoning Soy Sauce
  • 1 Tablespoon Garlic
  • 3 Tablespoon Palm Sugar
  • 1 Coriander Root
  • 1/2 Teaspoon Sea Salt
  • 1 Tablespoon Five Star Powder
  • 1 Tablespoon Cinnamon
  • 3 Egg
  • 1 Firm Tofu
  • 1000 ML water
     

For Flat Rice Noddle

 

  • 2 Cup Rice Flour
  • 2 Cup Tropicana Flour
  • 1 Cup room temperature water
  • 1 Cup boiled water
  • 1 Tablespoon Rice Bran Oil

The Veggie from my garden for garnish and side dish.

 

  • 3 Water Spinach
  • 3 Parsley

Let's start with the stews.

 

  • Cut off the pork which I'll used half of it for this recipe and safe the least for another menu.
  • Pounding the garlic, pepper coriander root and ginger.

  • Fried the tofu and set aside

  • Drop the palm sugar into the same pan and stirred it until golden caramelize then add the pounding spice and cinnamon into the pan and whisk them together. Then drop the pork and five spices powder and salt.

  • Pour the water to the pan and drop all the sauce, all the Chinese Medicine Herbs, and dried mushroom.

  • Switch the pork from the pan into the stewed pot and drop the tofu and stewed it for at least 1 hour with low heat then drop the Thai radish and carrot then boiled it until cook.

A Quality Time for making Flat Rice Noodle

 

  • Pour the flour into the mixing bowl and pour the water a little
    first then pour a little bit more and kneed it after. Do the same procedure until pour all the water.

  • Then pour the boiled water and add oil then rest them for 30 minutes.

  • Brush the steamed dish by oil and pour the batter into it and should whisk the batter together every time. Then steam it for 2 minutes.

  • Brush oil to a dish that we will put the noodle sheet first.

  • When the noodle sheet is cooked take it off from the steamed pan and let's drop it into the container that lay down with water to help it cool down quicker and more easy to pull the sheet out.

  • Use the spatula and ease the noodle sheet away from the edge around the dish and pull it out gentle and drop it into the another dish and surface with oil to prevent them stick together.

  • Follow the process for the second noodle sheet and next until the batter finished.

  • Cut the noodle wide about 1/2 inches.

Let's slice the boneless pork knuckle into a big piece.

Boiled the egg for 7 minutes.

Let's branch the noodle first because I prefer a noodle without oil for my healthy stewed.
