Bitter melon with Egg

Hello everyone. Today, allow me to show you how I cook a bitter melon fruit. Bitter melon came from a gourd family, and yes it is bitter in taste and gets even bitter as the fruit grows older. This tropical vine is actually a fruit and is common in Asia. It is also used in herbal purposes.

They called it in many names such as Bitter melon, bitter gourd, bitter squash and more. It has several varieties. The shape and bitterness of the fruit vary from each variety.

An excellent source of important vitamins and minerals. Bitter melon is used herbally for diabetic people, though it is not approved by science, despite that it contains insulin like properties and can manage sugar levels.

So here is the simple but tasty recipe.

Ingredients

Bitter melon, chopped
Salt, as required
Garlic, minced
Onion, diced
Eggs, 2 pieces
Lime, ½ tsp, optional
Salt and pepper

Preparations

  • Wash and Remove the seed. Chop and pour salt over the raw fruit. Mix and squeeze the fruit, extracting the juice as much as you can. Rinse the raw fruit with water and it's ready to cook.

  • Preheat the pan and add oil. Saute garlic and onion until soft and translucent.

  • Add the bitter melon and mix. Cook until the fruit is soft.

  • Add the beaten egg with a juice of lime (½ tsp). Cook till the mixture is set and solid.

  • Adjust your seasoning with salt and pepper.

Tips:

  1. Avoid mixing too much to avoid bitter taste from mixing.

  2. Salt is added into the raw fruit, this will help to release the bitter taste of the fruit.

It may require a bit of effort in extracting the juice but is worth it. Simple and tasty.
