Tuna Fish Tamarind

My dish is called Tamarind Fish Tuna. This tamarind tuna is a typical food from North Sumatra. In North Sumatra there are lots of delicious foods, one of which is tamarind tuna. The taste is spicy, sour, savory and the aroma of the special spices really arouses our appetite. Eating it with family makes it even more delicious.
The cooking process is also easy, it doesn't take long, so for those of you who are busy with work, don't worry, you can definitely make it. But I don't know if some of the spices are available in your area.
Ok..let's start cooking.
First, let's take a look at the ingredients and seasonings.
Material:
- For ingredients I used 800 grams of tuna. For those of you who don't like tuna, you can change the type of fish. It's up to you what kind of fish you can do.
- I added eggplant as a complement, so for vegetables you can also add other vegetables, such as long beans, but you can also not use vegetables.
Spice:
- 20 red chilies + 20 cayenne peppers, you can increase the amount of chilies if you like it spicy, or reduce it if you don't like it spicy
- 8 cloves red onion
- 4 cloves of garlic
- 4 candlenuts
- One segment of turmeric
- Just a little ginger
Complementary spices:
- Sere 2 pieces, hit until they break
- Kincung 1 piece, or you can add more if you want a strong aroma. Kincung is the flower of the cekala tamarind tree, and it is a typical spice from North Sumatra. The aroma is so distinctive that it can arouse our appetite. Oh yes, cut it into thin pieces or split it so that the aroma comes out. If kincung isn't in your area then you can skip it.
- 5 pieces of asem cekala or more if you like a sour taste and strong aroma. Hit the cekala tamarind until it breaks. But if you don't have it in your area, you can replace it with another type of acid.
- 1 piece asem gelugur, or we call it asem cut
- 1 tomato, cut into pieces
OK, now it's time to cook. First of all, clean the fish, and cut it according to taste, then wash it until it is clean, add a little orange to the fish to reduce the fishy smell. Then fry the fish with enough cooking oil. I like the fish fried, but if you don't like the fish fried, it's okay not to fry the fish.
Continue to grind all the spices that we have prepared until soft, then sauté the spices in a little cooking oil. Until the spices give off a fragrant aroma, then add approximately 200 ml of water, after boiling the water, add all the complementary spices that have been prepared earlier, add the eggplant vegetables and fish, salt to taste and a little sugar. Leave it until the vegetables are soft, stir the dish occasionally so it doesn't burn at the bottom, but don't stir it too often because it can cause the fish to fall apart. Once cooked, the dish is ready to be served.
Serve the tamarind fish in a bowl, prepare the rice and the dish is ready to eat.
