It is actually one of the most popular Nigerian soup used for eating meals such as Eba know as garri (geanulated cassava or cassava granules), pounded yam, fufu made from cassava (yuca) and wheat meal.
Egusi soup is a melon seeds of a type that is ground for use in West Africa cooking called Egusi.
Egusi is the name for the protein rich seeds for certain cucurbitacious plants which after being dried and ground are used as a major ingredient in West Africa cuisione.
Let me show you how I prepared my delicious egusi soup.
These are the ingredients I used to prepare my delicious egusi soup:
. Grounded melon
.Salt
.smoked fish
.maggi (beef stocked cubes)
.beef or chicken
.pepper mix
.pumpkin leaf (ugu leaf)
.palm oil
.cray fish
These are the steps i used to prepare Egusi soup.
..Ground the melon, add to a bowl nd mix with a cup of water to form a paste and keep it aside.
I used frying method to prepare the Egusi soup.
They have different method of preparing Egusi soup.
Frying method
Boiling method
..Place a big pan or pot on heat and add palm oil, heat for about some about some minutes (2-3minutes). Do not bleach the oil and add chopped onions.
..At this point, i added the mix egusi paste and stir for some minutes, add water and cover for about 10minutes.
..Add smoke fish or dried fish, crayfish, pepper, beef stock or chicken, add the beef seasoning cube, salt, then stir and taste it. Make sure the ingredient taste is balanced. Allow it to cook for about 10minutes and cover.
..Lastly, i added the ugu leaf that was chopped and allow it to boil for 2 minutes before bringing it down.
Then you can serve it out with either pounded yam or eba.
