Chocolate brownies - how to change up a recipe and it still works.

My post today is to highlight having confidence in taking recipes and tinkering a little and having fun.
I want to share a recipe I made today for chocolate brownies. I found what looked like a good basic recipe on youtube and set to. The only thing was I didn’t have a bar of dark chocolate so I substituted what I did have which was a box of Cadbury’s Easter eggs - namely hollow eggs made of milk chocolate.

That is one of the fun things about cooking, experimenting around a set recipe to make it yours or just to get by if you are missing one ingredient that can be substituted with another.

I also used all organic brown sugar as the recipe called for a mix of white granulated and soft brown sugars. I never buy white granulated sugar, so continued using just the organic brown I keep in.

I also didn’t have the correct size and shape of a traditional brownie baking tray so I used a round cake tin.

This caused the brownies to be deeper and so cooking time got extended for 30 to 45 minutes.

The most important thing is…..

The results were fabulous!

Life is sometimes about just going for it, trusting yourself with a “can do” attitude rather than missing out because of a “can’t do “ attitude.

Here we go then…..

I melted 200g of chocolate over a pan of boiling water and melted in 115g of butter and beat until smooth.

In another bowl I combined 320g of brown sugar with 3 eggs , whisking in one egg at a time until soft and frothy.
To this I added the melted chocolate and butter.

Then after mixing together I added 68g of flour and 25g of cocoa powder.

I then added 1 tablespoon of vanilla extract and a pinch of salt.

This batter is then poured into a paper lined tray (brushed with a little melted butter) and cooked at 180 C for 30 minutes.

As I mentioned earlier I had changed up the cooking tin dimensions from the recipe so ended cooking it for a further 15 minutes.

So soft, fudgy and DELICIOUS! Whipped cream feels like a possible extra but it could just kill me! LOL
