Special Method of Preparing Brinjal (Eggplant / Aubergine ) Pahi

My dear Hive friends,
Today I am going to show you one of Sri Lankan Speciality known as Brinjal Pahi.

Ingredients
350 gr Brinjal
1/4 B.Onion chopped
1/2 tomato cut into pieces
1 green chilli cut into pieces
12 nos of curry leaves
2 pieces of pandon leaves
1 tea spoon Maldive fish
1/2 tea spoon curry powder
1/2 tea spoon roasted curry powder
1/2 tea spoon salt
1/4 tea spoon turmeric
150 ml oil
100 ml thick coconut milk

Method
First remove the stems of the Brinjal and wash it properly.
Cut it into thin pieces as shown in the picture. Cut pieces put in a bowl.

Add salt and tumaric and mix it well.

Put 150 ml oil to a pan and keep it on fire and fry it until it's golden brown.

Put the fried brinjals into a strainer and transfer it to pan.

Add onion, green chillies, curryleaves, pandon leaves and tomato.

Now add Maldive fish, curry powder, roasted curry powder,balance tumaric and balance salt.

Add thick coconut milk and mix it well and keep it on the fire.

Keep it on low fire until the gravy reduces.

Now the cooking is over. You can take it to the table.
