Hello my dear Hive friends,
Today I have chosen to prepare a dish for you from the eggplant family.
Its known as white eggplant. we call them Thalana Batu. I am preparing this dish according to my style.
Ingredients
250 gr white eggplant
8 nos Jack seeds
1/4 B.Onion chopped
green chillies chopped
10 nos curry leaves
2 pieces pandon leaves
1/2 tea spoon curry powder
Dash of tumaric
1/4 tea spoon dil seed
1/2 tea spoon salt
150 ml thin coconut milk
100 ml thick coconut milk
Method
First clean the Jack seeds and cut them in to pieces add water and boil them.
Then take the white eggplant clean them as shown in the picture.
Wash them well and put in to a pan.
First add thin coconut milk as the colour of the eggplant may change.
Add B.Onion, green chillies, curry leaves and pandon leaves.
Add curry powder, tumaric, dil seeds and salt.
Add the boiled Jack seeds and mix it well keep it on fire.
When the gravy is redcued add thick coconut milk .
Mix it well and keep on low fire till the gravy reduces.
Now you have a readymade white eggplant curry. Put it to a curry bowl and send it to the table.
This dish is high in potassium, vitamin B, magnesium and copper.
