Today I am feeling kind and want to share with you the cooking tricks that I have inherited from my family and have learned over these years since I got married and live with my mister husband.He is delighted with how I cook and not to brag but my husband is a good mouth too. Besides, he has learned these tricks and I leave him alone to recreate some dishes with all the confidence in the world.
I'm not the most expert but I've told you whenever I can that my love and passion for preparing typical food, new dishes and homemade recipes I learned from my mom. So did the food yield. Even in good times, when I lived in Venezuela, it was amazing the tricks my mom used to do to make ends meet. So I want to share this with you in case anyone needs it. I am also open to you to share yours with me in this publication.

From my experience, a kilo of chicken breast yields more if it is shredded, whatever you call the procedure of separating the meat of this part of the previously parboiled chicken into thin strands. You prepare it with the vegetables and seasonings that you like and that's it.
In my house, there are three of us big eaters, including my baby. He set aside his portion for three days a week. By doing this trick, the breast yields enough for three meals. I'm not lying to you. I make chicken tacos or fajitas, Venezuelan empanadas and chicken salad with this amount and everyone is happy and satisfied.

If you want to eat and prepare Chinese rice at home, it is not necessary to prepare the rice beforehand. My trick is to use steamed rice. It is an excellent option. I prepare it as follows: For one and a half cups of rice, I add 2 cups of water. Previously I mix the rice grains with a dash of oil and a little bit of salt. Do not overdo it with the salt because remember that this rice will be bathed with soy sauce afterwards.
We continue. Once you observe that the rice is about to evaporate all its water, place a lid on top for 5 minutes, no less and no more. The rice will be so loose that you can't imagine. Of course, prepare it two or three hours before so that it rests very well.

Do not cut hard cheese into slices, grate it with the help of a food grater. Here in Spain, or rather, here in Tenerife, we don't have hard cheese but we do have a similar cheese known as fresh cheese. It has the texture and flavor of a Venezuelan paisa cheese. It is not as salty as hard cheese but it tastes great. From stuffing an arepa to stuffing your pancakes (tortitas 🥞), this trick makes you yield the charcuterie if you buy it in small blocks or cubes like me. I also remember my mom grating the ham, go figure.

Want to make super-fat pancakes 🥞 like the one in the commercials? Forget about spending hours beating egg whites and getting sore arms from all the beating. My trick is to add half a teaspoon of baking soda to the mix. Yes, that's it. No fuss, no extreme tricks. The baking soda gives it consistency and will make your pancakes 🥞 very fluffy. Of course, always make them in a non-stick pan and over low heat so they don't burn.

Don't throw away your bruised vegetables! If they look good despite being bruised, chop them into chunks, sauté them with a little oil, blend them and save them. This will save you a lot of time in the kitchen. I usually do this with tomatoes, onions, paprika, chives and leeks. I put everything together, cook, blend, store in a glass container in the fridge and that's it.

If the bread you just bought 🥖🍞 has become hard, don't throw it away. Con ayuda de un cuchillo de sierra, pícalo en cubos y metelos al horno por 10 minutos a 180 grados. Tendrás unos fabulosos y crocantes crotones para recrear una rica ensalada césar.
