Adobo with Potatoes
Recipe
Adobo means "vinegar-braised", it is usually made with large chunks of pork and it is saucy. A savory taste was achieved by the combined taste of soy sauce, vinegar and some people love to sprinkle it with sugar.
As the years passed, adobo has many versions like putting some bananas (saba), pineapple, and more. My version was adobo with potatoes and it is not saucy.
Ingredients:
- 600g Pork, sliced into chunks
- 2 Medium-size Potato, peeled and cubed
- 3/4 Cup Soy Sauce
- 2 Gloves Garlic, minced
- 1 Onion, chopped
- 1 Cup Water
- 1 Bay leaves, optional
- 2 Tablespoon Vinegar
- 3 tablespoon Cooking Oil
The last 3 ingredients can't be seen in the photos but I didn't put bay leaves, I ran out of them.
Let's get cooking!
Heat the pan then add the cooking oil, when it's ready fry the potatoes until golden brown. Set aside.
In the same pan, sauté onion and garlic until fragrant.
Add the pork, mix it, and let it be fried for a little while. Pour the soy sauce and water, you also add the pepper and bay leaves. Let it boil until the pork is tender and the liquid is almost gone.
Add the fried potatoes and mix well, add the vinegar and let it cook for a minute before mixing.
It is ready when the oil starts to appear and the sauce is already gone, and it smells like marinated fried pork.
Transfer it to a bowl or plate.
It is now ready to be served!
Let's eat! It is best paired with garlic rice and some fresh tomato!
