Homemade Potato Wedges | Step-by-step process.

If you have a family to feed, you better know the struggle of deciding 'what to cook'. I don't know if you have a fixed plan or not, or if you never struggle with this. But for me, I sometimes can't decide what would my son like, will take less time to prepare and delicious at the same time.

Let me share my potato wedges recipe. It's not super healthy but it will save and make some of your afternoons easy for sure!

What we need:

Large potato- 2 piece
Salt
Peeper/ Dried chili/ Chili flakes
Chili power
Baking Soda
Cornflower
Ice water
You see, we need only a few ingredients. Also, it takes only a few minutes to prepare. Easy peasy!

How we can make it?

Pill the potatoes and slice them into large chunks.

Put them in the freezer to chill for one hour. If you want to prepare this instantly, then chill them for half an hour in ice-cold water. It will help reduce the potato starch.

Boil them for a few minutes. And then let it cool over kitchen napkins for a few minutes so there will be no extra water.

I use dried chili to make the chili flecks. You can use readymade flecks as well.

Now it's time to make the seasoning!

This is the crucial part. So make sure to put the ingredients proportionately.

Put some chili flacks, a pinch of chili powder, salt, one teaspoon of baking soda, and some cornflour in the bowl. And mix it well. Add some cold water to maintain the thickness. It will be a honey texture, don't make it too watery.

Add the potato slices to the seasoning and mix it well. But careful as they are boiled so they may break easily.

Now let's fry the wedges!

Heat the pan with vegetable oil and put the potato slices into it.

Keep the fire in medium heat and fry the wedges for a minute or two.

Take them off from the pan and put them in a kitchen napkin to reduce the extra oil and cool them down.

After a few minutes, it will be ready to serve. Add some sauce and serve it hot.

If you have a grown-up kid like me or a sudden guest, this recipe will save you. Also, to cheer up our taste buds, this can be a perfect item. Try it, this homemade one can beat the taste of the restaurant wedges.

After each meal, I have to start thinking hard of what the next one will be vis-a-vis everyone's tastebud and sometimes appetite.

hahaha...I usually have a set menu (pre-decided/planned) for lunch/dinner for the whole week. Like, meet on weekend, fish on Wednesday, egg on Thursday and so. But when it comes to snacks, I feel so lost.
