You may not find a single person in my country who doesn't have at least a bottle of 'Mango Murabba' at home. Because it's part of our tradition, it's delicious, good to go with rice and curry and it's easy to prefer. The best thing for me is it can be preserved for the whole year!
The sweet, sour and a little spicy flavor tastes amazing!
It's called mango murabba in our native Bangla. It's more like Jam with mango seeds husk. So, let's how we prepare it.
What we need?
- Green Mango slices with the seed husk
- Salt, sugar
- Ginger slices
- Cinnamon
- Dried red chilli slices
How to make Mango Murabba?
Slice the green mango with seed husks. Wash it and rinse the water.
Make a sugar syrup as per your taste. You can make it sweet or a little bit of sour as per your taste bud. Put ginger slices and cinnamon. Cook the syrup to make it medium thick.
Put the mango slices and cook them well for about 10-15 minutes with lead on.
Before you take the pot off, put some sliced red chili. And it's done. Give time to cool down and it's ready to serve and preserve.
You don't have to put any extra preservatives. The sugar will keep it fresh for many days. If you find any bad smell, just give it under the sun for a day. Or you can cook it for like five minutes again later to get rid of the smell. But usually, it goes well for a year.
And, always use glass made pickle jar to preserve it.
