Authentic Beef Kala Bhuna with Premix Masala: A Festive Delight.

Beef Kala Bhuna is a beloved dish in Bengali cuisine, renowned for its rich, deep flavors and striking dark color. Traditionally served during festive occasions like Eid, this dish brings families together around the dining table, celebrating its unique taste.

The term "Kala" means black in Bengali, referring to the caramelized onions and spices that give the dish its distinctive hue. When I prepared Beef Kala Bhuna for the first time using a premix masala during Eid, I was delighted with how wonderfully it turned out!

Here is a step-by-step guide to creating this delicious dish, guaranteed to impress your family and guests.


Ingredients:

  • 400 gm boneless beef, cut into medium-sized cubes
  • 2 tbsp mustard oil
  • 2 medium onions, thinly sliced
  • 4-5 dried red chilies
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 cup plain yogurt
  • Beef Kala Bhuna premix masala (any brand)
  • 1 cup water (if needed)
  • Fresh coriander leaves and green chili, chopped for garnish (optional)
  • Salt to taste (if required, based on the premix instructions)

The premix masala not only simplified the process but also ensured the authentic flavors were preserved. Otherwise, this dish requires tons of spices!


Preparation:

In a large bowl or directly into the pan, marinate the beef with the yogurt, ginger paste, garlic paste, onion, oil, and half of the premix masala.

Mix well to ensure the beef is coated evenly. Set aside for at least 30 minutes to an hour.

Cooking:

Cook for about 5-7 minutes, stirring occasionally until the beef starts to brown and the yogurt mixture thickens.

Reduce the heat to low, cover the pan, and let it simmer for about 45 minutes to 1 hour, or until the beef is tender and cooked through. If using a pressure cooker, cook for about 15-20 minutes after the first whistle, then allow the pressure to release naturally.

Frying the Onions and Chilies:

Heat the remaining 1 tbsp of oil in a separate pan over medium heat.

Add the sliced onions and dried red chilies to the pan. Fry them until they turn a bit more than golden yellow. This is a crucial step to achieve the signature dark color ("Kala" means black in Bengali) and rich flavor of the dish. The onions and chilies should be almost caramelized and slightly burnt.

Combining and Final Touch:

Once the beef is cooked and tender, add the fried onions and chilies to the beef mixture. Mix well and cook for 5-10 minutes, allowing the flavors to meld together.

Final look

Add the slit green chilies and adjust the salt if necessary.
Garnish with chopped fresh coriander leaves before serving.
