Oh well...these days it is really very cold for us here in Mauritius!!!
And today, on top of the low temperatures we are having some rain too...It is so good to stay warm on bed in such conditions!
But...we need to eat too and hence we have to wake up and get into the kitchen!
In this cold weather, noodles in chicken broth is what the body looks for!
So just hours ago, I myself prepared lunch for everyone at home! Let me show you what I did - Hope you'll like it and have a try someday!
The Ingredients needed!
Below are the ingredients that I used to prepare my dish!
- Chicken breast cut in small cubes / Fresh Noodles / Finely cut chives
- Carrots / Onions
- Tomato Salad (Tomato, onion, chili, coriander)
- Soy Sauce and Oyster Sauce
- Chicken Broth
Once I prepared and cut everything, it was time to cook the chicken while the broth was already heating on another fire.
Season the chicken with little salt, pepper and garlic paste - Sautee in a pan with little oil!
Then add the carrots and onion - Mix everything well together and cook for about 2 minutes.
Lastly add the soy and oyster sauce as per your taste.
Let cook for 7 minutes and set aside.
Next thing is to season the tomato salad and we are good to boil our noodles...
Here's all the preparations ready to go!
Portion the noodles in different bowls and bring to boil in the chicken broth - portion by portion!
Put the boiled noodles back in the bowls and add little more broth!
Top up with the sautéed chicken that we prepared above!
Lastly add the tomato salad and chives - and you can enjoy!
If you wish you can also add a fried egg on top!
The food was so yummy that even my daughter had so much fun eating it for lunch today!
In couple of minutes I will get ready to go to work - though I am feeling quite lazy with this weather!!!
