{en/es} 👨‍🍳Easy and delicious chicken broth. / fácil y delicioso caldo de pollo

Who said cooking is hard? My daughter and I were craving a comforting soup and I knew just what I needed to give it that special touch: sweet pepper and chives. And thanks to my kind neighbors, I got what I needed!

Preparing soup is so easy and practical, and while it's cooking, you can keep working. Although I would have liked to add carrots, hunger was already too great to go out and buy them. But even so, I share my recipe with you, I hope you enjoy it as much as we did!

Ingredients for four people:

  • Half a kilo of chopped chicken.
  • A chicken bouillon cube or flavoring.
  • Two white onions.
  • 2 tomatoes
  • One cup of short pasta.
  • 7 well-washed potatoes without removing the skin (I read that the nutrients of the potato are found just under that skin layer)
  • Salt, Adobo, carmencita, and if desired garlic sauce.
  • 3 tablespoons of corn flour, the one we use to make arepas (this is to thicken the soup at the end)

Preparation:

  • Heat a large pot and put a drizzle of oil to sauté.
  • Sauté the seasonings such as onion, chives, and finely chopped sweet pepper in the hot oil.
  • Clean the chicken pieces by removing the skin, I recommend leaving some of the chicken's own fat to give more flavor to the soup and we don't add almost no fat.
  • Add the chicken and the chopped potato in medium.
  • Add about 5 cups of water so that the soup is not too watery.
  • Cover and lower the heat to cook for 40 minutes.
  • Add the pasta, chicken bouillon cube, salt to taste, adobo, carmencita, stir and keep testing until it's ready.
  • Finally, add the corn flour little by little, well spread out so that it doesn't make lumps.
  • Before turning off the heat, make sure the chicken is well cooked inside near the bones.

Then, serve and I hope you enjoy it with your family. 🐤🐥
