This Clean Keto Chicken Mexican Rice is a low-carb twist on a Mexican favorite. It is quick and easy to make, and totally delicious!
INGREDIENTS
4 cups Cauliflower Rice
1 lb Chicken Breast
2 tbsp Coconut Oil
1 tsp Garlic powder
1 tsp Chili powder
1 tsp Cumin
1/4 tsp Cayenne pepper
1 Green Bell Pepper
1 can Green Chilies
1 small Onion
2 Garlic Cloves
DRESSING:
1/2 cup Primal Kitchen Chipotle Mayo
1 tsp lemon juice
1 tsp garlic powder
GARNISH:
Cilantro
Scallions
INSTRUCTIONS
Cut the peppers and onions into bite-size pieces. Heat a skillet over medium heat and add 2 tbsp of coconut oil. Cube the chicken into 1-inch pieces and cook for 5 minutes. Add in all the seasonings, pepper, chilies, onion, and garlic, and continue to cook until chicken is fully cooked, 10 minutes or so. Add the cauliflower rice and stir to coat. Let cook for 1-2 minutes, then remove from heat. Serve with dressing and top with fresh cilantro and scallions.
